St Patrick is the saint credited with converting the Irish to Christianity in the 5th century AD. Legend says he was born in Scotland where he was captured by Irish raiders and brought to Ireland as a slave. After years tending to the hillside flocks of the chieftain, Milchu, in Co. Antrim, he escaped and fled to France where he became a priest and later a bishop. Eventually Patrick returned to Ireland when 60 years old, his mission to convert the wild Irish to Christianity. By the time of his death on the 17th March 461 AD at Downpatrick he, and his disciples, had established Christianity as the main religion of the island.

Hail glorious St Patrick, dear saint of our isle ...There are many, many stories about St Patrick but what he is most famous for, apart from converting the Irish and driving out all snakes from Ireland, is giving Ireland it’s national symbol, the shamrock.

The Great Potato Famine of 1845-47 which resulted in the death of over half a million and the subsequent emigration of almost two million gave the potato a singular position in irish history.

In spite of its troubled past the potato is a much loved vegetable in Ireland and the many traditional recipes that sprung up over the centuries are still found in everyday use in modern Ireland.
